S’mores Brownies – Gluten and Dairy Free
If you’re like me and always on the lookout for gluten and dairy free recipes, I probably had you at the title – amIright?! S’mores. Brownies. Gluten Free. Dairy Free. Delicious and decadent. And so easy to make! I had a box of gluten free brownie mix in my pantry and s’mores on my mind. The best part was when they came out of the oven my youngest daughter said, “We can eat those?!” At age 6 she’s been gluten and dairy free for as long as she can remember, and she knows to ask “Are they gluten dairy free?”
You could use a homemade brownie recipe, but the box mix was simple and delicious. I started with a gluten free graham cracker crust, which was made possible by the gluten free graham crackers I had in my pantry. I also used ghee for the crust, which is casein and lactose free, but if you have a dairy allergy and can’t do ghee you could easily use a vegan butter instead. Or, if you have no dairy restrictions, use butter!
To make the brownies a little richer (because clearly this wasn’t rich enough already) I also added some allergy-friendly mini chocolate chips to the batter. After I baked the crust I added the brownie batter, baked it according to the directions, but baked just a little under so they wouldn’t be dry. Then I added a couple of small handfuls of mini chocolate chips to the top, marshmallows on top of that, and put it under the broiler for a few minutes. If you try this at home, watch it closely! Or you might discover that the marshmallows get a little darker than you plan. I may or may not have had a bit of smoke coming out of my oven. Thankfully though I didn’t actually burn anything!
In my opinion, baked goods are best served with a book. What can I say? We’re homeschoolers. Everything is better with a book. We have Marshmallow, which is a sweet children’s book about a bunny and a cat. This one, Marshall Mellow, is on my wishlist because it looks like a fun story. And because we are working on learning rhyming, this one, S’mores Indoors, is also on my wishlist. And without further delay, here’s the recipe!
- 1½ c finely crushed GF graham cracker crumbs
- 6 tbsp ghee (or vegan butter or real butter), melted
- 3 tbsp sugar
- GF brownie mix or your favorite brownie recipe
- allergy-friendly mini chocolate chips (optional)
- allergy-friendly mini chocolate chips
- mini marshmallows
- Preheat oven to 350 degrees
- Line 8x8 dish with parchment and spray the sides of dish
- Make the graham cracker crust by putting the graham crackers in a food processor and then measure 1½ cups of the crumbs
- Mix the crumbs with the sugar and melted ghee
- Press the mixture into baking dish
- Bake for 8-10 minutes
- While the crust is baking, prepare the brownie mix according to the directions, mixing in chocolate chips toward the end.
- Bake according to directions of box/recipe, but underbake just slightly
- Remove from oven and add a handful or two of chocolate chips to the top while still hot
- Top with mini marshmallows
- Put back in the oven under the broiler for a couple of minutes, but watch it closely to prevent burning
