Gluten & Dairy Free Russian Tea Cakes Cookies
Wedding cookies. Snowball cookies. Russian tea cakes. Whatever you call these little cookies, I call them delicious! I typically make them around Christmas, but there’s no reason not to make them other times of year as well! And, being that they’re gluten and dairy free, my celiac friends can also enjoy these allergy-friendly cookies! In fact, they are egg free and therefore vegan as well. However, they are not particularly low sugar, and definitely not low fat!
I have a confession though. I didn’t have enough cookies left to photograph, so this is the only view you get for now!

And now onto the recipe!
Gluten & Dairy Free Russian Tea Cakes Cookies
Ingredients
- 1 cup vegan butter or margarine, softened
- 1 tsp vanilla extract
- 6 tbsp confectioners sugar (powdered sugar)
- 2 cups all-purpose gluten free flour (with xantham gum already included)
- 1 cup finely chopped walnuts
- pinch of salt
- additional confectioners sugar for rolling the cookies in
Instructions
- Preheat oven to 350 degrees
- In a mixing bowl, cream together the vegan butter and vanilla until smooth.
- Combine the 6 tablespoons confectioners sugar, flour, and salt.
- Mix the dry ingredients into the butter mixture until just blended.
- Mix in the chopped walnuts.
- Roll dough into 1 inch balls. (I use a cookie scoop)
- Place them 2 inches apart on baking sheet lined with parchment.
- Bake for 12 minutes.
- When cool, roll in additional confectioners sugar.
