Gluten & Dairy Free Russian Tea Cakes Cookies
Wedding cookies. Snowball cookies. Russian tea cakes. Whatever you call these little cookies, I call them delicious! I typically make them around Christmas, but there’s no reason not to make them other times of year as well! And, being that they’re gluten and dairy free, my celiac friends can also enjoy these allergy-friendly cookies! In fact, they are egg free and therefore vegan as well. If you’re like me and always on the lookout for gluten and dairy free recipes, I probably had you at the title – amIright?! S’mores. Brownies. Gluten Free. Dairy Free. Delicious and decadent. With it being Fall, pumpkin season is in full swing here! I’ve made a few different pumpkin cookies recipes, and these are definitely my favorite! They are really soft with just the right amount of spice. Many people make their own gluten free all purpose flour mix, and I have in the past as well. But lately my go-to gluten free flour is Pamela’s brand. I think it tastes great and bakes well. My husband (who is not gluten free) often says “Wow! Gluten and Dairy Free Pumpkin Cupcakes with Cream Cheese Frosting
I have always loved to bake. However, when we learned that our daughters needed to be strictly gluten and dairy free it was a challenging transition. These days it’s almost second nature to me, and it’s hard to remember how overwhelming it was at first. For our Poetry Teatime this week I made gluten and dairy free pumpkin cupcakes with faux cream cheese frosting. Poetry Teatime!
It’s been a LONG time since I’ve updated the blog. My younger two will begin 1st grade next week after Labor Day, and we are still homeschooling! One thing that we will be incorporating into our regular weekly schedule is a Poetry Teatime. So, we thought it would be fun to invite my mom over to join us for our first tea party of the school year (a week early.) Allergy-Friendly Pumpkin Pie Custard
I made this pumpkin pie for my girls for Thanksgiving, from a recipe in the He Won’t Know It’s Paleo AIP Holiday e-book. Since then I have modified the recipe a bit to make it a little less spicy and a little sweeter. I also skip the crust and just make the custard. It is super quick to whip up in my vitamix, and my girls absolutely love it.
